Tabouli

Ingredients

2 cucumbers 

2 tomatoes 

4 spring onions, green only 

1 bunch of parsley 

1⁄2 bunch fresh mint 

2 tablespoons burgul, fine grade 

1/2 cup olive oil, best quality 

 

Juice of 2 lemons, freshly squeezed only. (Do not use store-bought lemon juice). 

Directions

• Cut the cucumbers, tomatoes, and onion into cubes as small as possible. 

• Remove the stalks of the parsley then chop the parsley and mint very finely. Mix all of the vegetables. 

• Soak the bulgur in a little water with a little salt. Wait 5 minutes and add the burgul to the vegetables. 

• Season with olive oil and lemon juice. Add salt and black pepper to taste and mix well. 

• Prepare salad at least 15 minutes before serving, so the flavors come together and the bulger can continue to soften and absorb the liquids. 

 

Note: If you are serving the salad more than two hours after its completion, it is advised to refrigerate the salad.
