Freekeh

Ingredients

1 large onion 

2 Tablespoon olive oil 

200g Freekeh 

1/4 teaspoon ground cinnamon 

Salt and pepper (to taste) 

1 teaspoon baharat 

300ml water or good-quality vegetable or chicken stock

100g slivered or sliced almonds

Directions

• Dice the onions and place with the olive oil in a large heavy-based pot, sauté on medium heat, stirring occasionally, for 10 minutes or until the onion is soft and brown. 

• Meanwhile, soak the freekeh in cold water for 5 minutes. Drain in a sieve and rinse well under cold running water. Drain well. Add the freekeh and spices to the onions. Stir well. Add the water 

or stock and 1 teaspoon of salt. Stir well. Cover and bring to the boil, reduce the heat to a bare minimum and leave to simmer for 15 minutes. 

• Remove the pan from the heat and leave it covered for 5 minutes. 

• Finally, remove the lid and let it cool down a little, about another 5 minutes. 

• Fry the almonds until golden brown. 

• Stir in half of the fried almonds. 

• Transfer on to a serving plate and garnish with the remaining almonds.
